Delish Chickpea - Avocado Salad

Toady we are going to dive in a yummy salad recipe.


Salads are one of my favorite foods. Not because I am a vegetarian but because they are fresh, crunchy, colorful and you can customise them to include any fruits and vegetables that appeal you or whichever ones you have on hand. Salads are just amazing !! You don't have to cook anything or measure anything, just toss the ingredients in the bowl, mix it up and Bam!!!  you have a meal. 

Chickpeas are perfect for adding plant based protein to your diet. They are also rich in iron and B vitamins. Avocados are incredibly loaded with heart-healthy monosaturated fatty acids. So all and all chickpeas and avocado salad is one of those hearty, meat-free salads, that is packed with enough nutrients to make it a meal or even a great side dish. It can be made ahead of time and hence great idea for meal prep.

Ingredients:


For Dressing:
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp lemon juice 
  • 1  garlic clove pressed or minced
  •  Seasoning-  salt, pepper and any hot chilli sauce ( like tabasco or siracha)
   
For Salad:
  • 2 cups boiled chickpeas ( you can use canned)
  • 1 Avocados cut into cubes
  • 1/2 medium red onion thinly sliced 
  • 6-8 cherry tomatoes halved
  • 1 cup salad greens roughly chopped 
  •  2 green chillies , finely chopped (optional)
  •  Seasonings-  salt, cumin powder, red chilli powder.

Preparation: 

  •  Firstly make dressing. Add all the ingredients for dressing in a bowl and add the seasonings as per your taste. Give it a good mix and set aside.

  •  In your salad bowl add boiled chickpeas and season with cumin and red chilli powder as per your taste.

  •  Now add onions, salad greens, tomatoes and mix everything well.

  •  Now add the avocados and mix lightly. 

  • Add green chillies for extra spice.

  •  Bring in the salad dressing and drizzle it on top. Mix lightly.

  •  Your crunchy colorful salad is ready. This salad is great lunch boxes or your backyard barbeque.


Salads is a super convenient way to work in a couple of servings of vegetables or fruit to your meal.
