The Ancient Super food - Chia Seed Pudding
- Chia seeds - 2 tbsp
- Milk - 1 cup
- Honey - to sweeten
- Toppings - Mixed berries, Sultanas, Weetbix chunks,(Or chopped fruits, nuts , chocolate, or just about anything you like)
Once the chia pudding mixture is well combined, let it sit for 5 minutes, give it another stir/shake to break up any clumps of chia seeds, cover the jar and put it in the fridge to “set” for 1-2 hours or overnight.
Step3:
Once set , the mixture is all ready for your favourite topping. Here I have topped with weetbix chunks and sultanas and mixed berries. You can make it as simple or as fancy with the toppings like chopped fruits, mangoes, bananas, choclate bites, crackers, breakfast cereals or chopped nuts . No matter what you add your chia pudding will turn out just delicious.
For vegan option you can substitute milk with almond, soy or coconut milk. You can also replace the honey with any of your preferred sweetener. The chia milk mixture can be made ahead of time and stored in the refrigerator for about a week so you can grab a quick breakfast or snack.
