The Ancient Super food - Chia Seed Pudding

Chia pudding is a perfect healthy recipe for breakfast or snack time. It is delicious, creamy and loaded with nutrients. Chia seeds are one of those ancient super foods that will give you maximum nutrition with minimum calories.




        Before we go ahead with the recipe, lets discuss the goodness of these tiny heroes.  Despite their size,  chia seeds are power packed with protein, fibre, calcium and iron. They are gluten free, vegan, rich in antioxidants and an excellent source of plant based omega -3. Chia absorbs up to 12 times of its own weight and expand to curb your appetite, so adding just an ounce or so of these magical seeds to your diet can reduce caloric intake, plus double the amount of fibre you receive. 



        The process of making chia pudding is so easy you will be surprised!!

 Ingredients:
  • Chia seeds - 2 tbsp
  • Milk - 1 cup
  • Honey - to sweeten 
  • Toppings - Mixed berries, Sultanas, Weetbix chunks,(Or chopped fruits, nuts , chocolate,  or just about anything you like)


Reciepe:
Step 1:
The first step is to stir together your chia seeds, honey and milk in a mason jar or bowl. I start with 2Tablespoons of chia seeds to 1 cup of liquid, but if you want a thicker chia pudding I recommend using 3Tablespoons to 1 cup of liquid. I like to separate the portions in small mason jars so i can assemble individual serving in the same jar.


Step 3:

        Once the chia pudding mixture is well combined, let it sit for 5 minutes, give it another stir/shake to break up any clumps of chia seeds, cover the jar and put it in the fridge to “set” for 1-2 hours or overnight.



Step3:

        Once set , the mixture is all ready for your favourite topping. Here I have topped with weetbix chunks and sultanas and mixed berries. You can make it as simple or as fancy with the toppings like chopped fruits, mangoes, bananas, choclate bites, crackers, breakfast cereals or chopped nuts . No matter what you add your chia pudding will turn out just delicious.



        For vegan option you can substitute milk with almond, soy or coconut milk. You can also replace the honey with any of your preferred sweetener.The chia milk mixture can be made ahead of time and stored in the refrigerator for about a week so you can grab a quick breakfast or snack.
