Green Cashew Pesto Pasta

I am going to assume, you've all had pesto pasta at some point. Pesto pasta is the quickest pasta recipe ever and is incredibly simple with only few ingredients. This pasta sauce will cook in about the same time it takes to cook some dried pasta in boiling salted water. It’s a super versatile sauce that adds a hint of freshness, colour and flavor to your pasta.


Traditionally Pesto sauce is made from crushed garlic, pine nuts, salt, basil, parmesan cheese and finished with olive oil. It is such a simple recipe and can be altered to be made with any type of greens and nuts of your choice. Even though it is usually served with pasta, pesto also works great on grilled potatoes, grilled sandwiches as well as dips for pita chips or breadsticks.

Ingredients:

1 cup dried pasta
1 bowl of  mix greens 
1/2 cup Cashews
2 tbsp olive oil
2 tbsp lemon juice
1/2 cup grated Parmesan cheese
2 - 3 Garlic pods
5 - 6 Cherry tomatoes
Black pepper, Salt and Mixed herb seasoning (according to taste)



Method:

1. Bring 2 cups of water to boil in a sauce pan. Add the greens to the boiling water and stir in for a couple of minutes until wilted. Drain them and add to the blender

2. To the blender, add cashews, garlic, black pepper, herb seasoning, lemon juice and half of the olive oil and blend until smooth.

3. Now add half of the parmesan cheese and pulse until just combined. Add your sauce to a bowl and top it up with the remaining olive oil. The pesto sauce is all done.

4. Cook the pasta  according to the instructions  on the box. Just a few minutes before draining the pasta, dump the halved cherry tomatoes into the boiling water with the pasta. Drain the pasta and tomatoes into a bowl.

5. Toss the pasta well with the pesto and garnish with remaining  parmesan cheese.

6. Your delicious Cashew Pesto Pasta is ready to dig in.
