Vegetarian Poke Bowl

Poke bowl is a popular Hawaiian dish that is made with diced raw fish and served in a bowl with crunchy vegetables and flavorful dressing. While the traditional recipe call for tuna or salmon , you can easily make it vegetarian or vegan by adding crispy tofu instead of fish.
The poke bowls are delicious, colorful, power packed with nutrients and bursting with flavors. There's no hard and fast rule for making poke bowl. The basic recipe involves a bed of rice topped with crispy tofu, vegetables and salad. However, if you are not into tofu, feel free to add roasted chickpeas, falafel bites or another plant based protein. You can also add boiled eggs for a non vegan option.
Ingredients:
- For tofu marinade:
- Soy Sauce
- Chilli Sauce
- Garlic
- Salt
- Vegetables:
- Red onion, thinly sliced
- Green capsicum, cut into strips
- Salad greens, roughly chopped
- Cherry tomatoes, cut into halves
- Purple cabbage, shredded
- Green chilies, finely chopped
- Rice
- White rice or brown rice cooked with a teaspoon of oil and salt.
- Alternatively, you can also use rice noodles or quinoa.
- Other:
- Oil
- Salt
- Cumin
- Lemon
- Red Chilli powder
- Black pepper
- Cook the rice with some oil and salt and keep aside.
- Mix all the ingredients for the marinade and marinate the tofu for at least 20 min.
- While the tofu is marinating, prepare the vegetables.
- In a pan , heat 1 tbsp. of olive oil to sauté onion and capsicum along with finely chopped green chilies and minced garlic. Season it with salt, cumin and red Chilli powder.
- In the same pan, add some oil and roast the marinated tofu until crisp.
- Season the salad greens, purple cabbage and tomatoes with salt, black pepper and generous amount of lemon juice.
- Now gather all the prepared ingredients and start assembling your poke bowl. Make a rice bed in a flat bowl and arrange the tofu, vegetables and salads in a way that all the colorful ingredients are visible.
- Your vegetarian poke bowl is ready dig in. Add a generous dollop of sour cream on top just before serving.
